The Bikini Cocktail

Makes enough for 10 people

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Put the listed ingredients inside a pan, heat until it reaches a light boil, stirring so the sugar melts. Then, remove from the burner and leave to reach room temperature completely. Pour to a clean bottle, cap it keeping it in the refrigerator, it will last for around four weeks.

For the Premix: Mix the specified liquid ingredients into a big jug, allow it to infuse for an hour, then filter it best through cheesecloth, to ensure it's perfectly clear.

To serve: Measure 85ml from the cocktail base into your mixing glass packed with ice, gently stirring lightly for a minute to cool it down. Filter into a frosted cocktail glass or a similar vessel, top with a few cranberries and finish by giving it a light spray of the essential oil over the top.
